Why Is My Air Fryer Food Not Crispy? 5 Common Reasons

If your air fryer food comes out soft instead of crisp, the cause is almost always one of five things: an overcrowded basket, food that’s too wet, too little oil, a temperature that’s too low, or skipping the shake partway through. Air fryers crisp by moving hot air over a dry surface, so anything that blocks the airflow or keeps the surface wet stops the crisp.

The five common reasons and fixes

1. The basket is overcrowded. This is the number one cause. When food is piled up, the hot air can’t reach every side, so it steams instead of crisping. Fix: cook in a single layer and do smaller batches.

2. The food is too wet. Surface moisture has to burn off before browning starts. Fix: pat foods dry before cooking, and skip wet batters, which don’t set in an air fryer.

3. Too little oil. A light coat of oil helps lean foods brown and crisp. Fix: toss or spray with a small amount of oil. Naturally fatty foods need none.

4. The temperature is too low. Crisping needs high heat. Fix: cook crispy foods around 380 to 400°F, and check our cooking times chart for the right setting.

5. You didn’t shake or flip. One side browns while the other stays pale. Fix: shake loose foods or flip flat ones halfway through.
