Food sticks in an air fryer for one of three reasons: not enough oil on the food or the basket, a nonstick coating that’s worn down from scouring or metal utensils, or a starchy food like potatoes or breaded chicken touching bare basket mesh before a crust has formed. Each cause has a different fix.
The three common causes and fixes
1. Not enough oil. Air fryers use far less oil than deep frying, but “far less” isn’t “none.” Lean proteins and starchy vegetables need a light coat to release cleanly. Fix: toss food in a teaspoon or two of oil before cooking, or lightly spray the basket itself.
2. A worn nonstick coating. Metal utensils, abrasive sponges or dishwasher cycles can wear down a nonstick basket over time, making it grip food it never used to. Fix: use silicone or wooden tools, hand-wash with a soft sponge, and check our cleaning guide for the routine that protects the coating. If a basket is visibly scratched through to bare metal, sticking will keep getting worse regardless of oil.
3. Starchy or breaded food touching the basket too early. Potatoes, breaded cutlets and battered foods stick most in the first few minutes, before a crust forms. Moving them too soon tears that crust. Fix: leave food undisturbed for the first several minutes of cooking, then shake or flip once a light crust has set — resist checking too early.
A quick no-stick checklist
- Light coat of oil on the food, not just the basket
- Basket free of deep scratches or bare-metal patches
- Silicone or wooden tools only, no metal
- Let a crust form before the first shake or flip
