An air fryer works by using a heating element and a powerful fan to circulate very hot air around food at high speed. That rushing hot air cooks the surface quickly and evenly, driving off moisture and browning the outside so it turns crisp — all without submerging the food in oil.
What happens inside
An air fryer has three key parts working together:
- A heating element sits near the top of the chamber and gets hot fast.

Two things create that crunchy, golden exterior:
- Fast moisture removal. The moving air pulls water off the food’s surface. A dry surface is what allows it to crisp rather than steam.

Why a single layer matters
Air fryers cook from all directions, so food needs room for air to flow around each piece. When you overcrowd the basket:
- pieces overlap and shield each other from the airflow,
